COFFEE COOKIES
Makes about 40 singles
125 g butter or margarine
125 ml brown sugar (100 g)
125 ml golden syrup
80 ml strong coffee
3 ml vanilla essence
560 ml Snowflake cake flour (315 g)
10 ml bicarbonate of soda
Filling
60 g butter or margarine
1 extra large egg white
500 ml icing sugar (250 g)
3 ml coffee powder
30 ml milk
Cream butter and sugar well together.
Add syrup and beat well.
Add coffee and essence.
Sift dry ingredients and mix well.
Press dough through cookie maker or roll into balls and place on a greased baking tray.
Bake in a preheated oven at 160°C for about 15 minutes.
Filling:
Mix all ingredients together.
Fill two cookies at a time with filling, if preferred.

Ingredients:

Yield: 4 dozen

1 cup powdered sugar
2 cups butter, softened (4 sticks)
1/4 teaspoon salt
Directions:
1 Mix all the ingredients together and roll (should look like a long sausage).
2 Cut into circles and place on a baking sheet.
3 Preheat the oven to 350°F and bake for about 10 minutes. If not totally baked, bake for another 10 minutes.

CHOCOLATE COATING :

1 cup hot water
40ml cocoa powder
15ml margarine
METHOD :
Preheat oven – 180 degrees.
VANILLA SPONGE :
1.Whisk castor sugar and eggs until fluffy and add the oil and essence and mix.
2.Add the sifted flour & baking powder alternatively with milk and mix.
3.Pour mixture into greased tray and bake for 25 minutes
4.Allow to cool.
5.Cut in squares.
CHOCOLATE COATING :
Heat :

Cocoa
butter
water.
6.Allow to cool, dip sponge squares into sauce and roll in coconut
